Within the last few years, knowledge about vitamins has increased dramatically, resulting in improved understanding of human requirements for many vitamins. This new edition of a bestseller presents comprehensive summaries that analyze the chemical, physiological, and nutritional relationships, as well as highlight newly identified functions, for all recognized vitamins. These include vitamins A, D, K, E, B6, B12, niacin, riboflavin, thiamine, pantothenic acid, biotin, folate, choline, and ascorbic acid. Keeping the tradition of the previous volumes, the Handbook of Vitamins, Fifth Edition provides an updated, contemporary perspective on vitamins in human nutrition. Bringing together leading experts in molecular biology, biochemistry, and physiology, the book contains substantial revisions in every chapter, covering vitamin metabolism, including human requirements, clinical aspects of deficiency, vitamin-dependant cell signals and gene regulation, and roles as coenzymes. The chapter on epigenetics has been updated and expanded to include novel findings about vitamins not previously considered in studies of nutrient-dependent epigenome modification. The book also contains a new chapter on genome stability, highlighting current understanding of vitamin–genome interactions in the evolution of the human genome and the functional consequences of human genetic variation. Maintaining its status as a high-quality reference, this handbook incorporates new discoveries into an updated and revised fifth edition.

This first volume of the Metabolic Pathway Engineering Handbook provides an overview of metabolic pathway engineering with a look towards the future. It discusses cellular metabolism, including transport processes inside the cell and energy generating reactions, as well as rare metabolic conversions. This volume also explores balances and reaction models, the regulation of metabolic pathways, and genome scale and multiscale modeling tools. It also covers developing appropriate hosts for metabolic engineering including the use of Escherichia coli, yeast, Bacillus Subtilis, Streptomyces, filamentous fungi, and mammalian cells using cell culture. Christine Smolke, who recently developed a novel way to churn out large quantities of drugs from genetically modified brewer’s yeast, is regarded as one of the most brilliant new minds in biomedical engineering. In this handbook, she brings together pioneering scientists from dozens of disciplines to provide a complete record of accomplishment in metabolic pathway engineering. With a wealth of cutting edge research and analysis, this work also serves as an invaluable resource for those seeking to add their own contributions. Organized by topic, this 3000 page reference is available as two volumes that can be purchased individually or as a set. For information on the complete handbook visit Cat No. 3923

Recent progress on enzyme immobilisation, enzyme production, coenzyme regeneration and enzyme engineering has opened up fascinating new fields for the potential application of enzymes in a large range of different areas. As more progress in research and application of enzymes has been made the Iack of an up-to-date overview of enzyme molecular properties has become more apparent. Therefore, we started the development of an enzyme data in formation system as part of protein-design activities at GBF. The present book "Enzyme Handbook" represents the printed version of this data bank. ln future a computer searchable versionwill be also available. The enzymes in this Handbock are arranged according to the Enzyme Commission Iist of enzymes. Some 3000 "different" enzymes will be covered. Frequently enzymes with very different properties are included under the same EC number. Although we intend to give a representative overview on the characteristics and variability of each enzyme the Handbock is not a com pendium. The readerwill have to go to the primary Iiterature for more detailed information. Naturally it is not possible to cover all the numerous Iiterature references for each enzyme (for special enzymes up to 40000) if the data re presentation is tobe concise as is intended.
